Soto Banjar is one of legendary food from Banjarmasin – South Kalimantan. It’s so tasty and really nice to have at the winter time. But in Banjarmasin, you could easily find it in hawker market everyday. Also, it’s one of my childhood memory when my family was living there for years.

 

Ingredients

  • 3 L water
  • 1 kg chicken
  • 1 tsp ginger powder
  • 1 tbs salt
  • 3 cardamom
  • 1 cinnamon
  • 6 cloves
  • 1 tsp nutmeg powder
  • 1 tsp pepper

Grounded ingredients:

  • 1 shallot
  • 5 cloves garlic

Additional:

  • Rice Cube
  • 100 g rice vermicelli
  • 6 potato cakes
  • 4 boiled eggs

Garnish:

  • 1 green onion
  • 1 tbs celery
  • 1 tbs fried shallot
  • lime juice
  • sweet soy sauce
  • soy sauce
  • sambal

Methods:

  1. Boil chicken with salt, bay leaves and ginger until tender. Let it cool. Shredded the chicken. Set aside.
  2. Take the chicken stock and put all the ingredients. Let it boil. And continued cook for about 15 minutes.
  3. Arrange rice cube, rice vermicelli , potato cakes and egg in a bowl.  Pour the hot soup. Add the garnish as you like.
  4. Ready to eat.

IDFB Challenge #16 : Kukis (Peanut Butter Cookies)

When it comes to the kitchen, sometimes i’m a bit selfish, i only cooked every food that i like…lol. Cookies are related to eid mubarak, because i only made cookies when it comes. When admin announce the challenge, yay…thank God, i still have some cookies left at home. Peanut butter cookies usually made from peanut, but recently there are some modification in ingredients to make it easier, some people using peanut butter to replace peanut. In my childhood, peanut cookies always made when lebaran or christmas. The texture so far a bit different between cookies that made from peanut and peanut butter. The one made from peanut had stronger texture which i love more.

Peanut Butter Cookies

250 gr        low protein plain flour
100 gr        icing sugar
125 gr        smooth peanut butter
100 ml       canola oil
2 sdm         milk powder
½ sdt         salt
1 sdt           butter

garnish:

3  egg yolks, whisk with 1 tbs fresh milk

Methods:

  1. Preheat oven 140’C.
  2. In a bowl, mix icing sugar, peanut butter, milk powder, canola oil and butter. Add flour gradually and mixed well.
  3. Make any shape you like, this time i make heart shape. Arrange in cookies pan.
  4. Bake in the oven until half cook, then polish the top with egg yolks mixture.
  5. Bake again until crunchy or the colour change into golden brown.
