Soto Betawi ala Sajian Sedap

– 300g beef lung
– 300g beef meat
– 300g beef tripe
– 500ml fresh milk
– 500ml coconut milk
– 2 tbs ghee
– 4 bay leaves
– 1 cinnamon stick
– 1 tsp nutmeg powder
Grounded ingredients:
– 1 shallot
– 5 cloves garlic
– 3 candlenuts
– 1 tsp pepper
– 2 slices galangal
– 1 cm ginger
– 1 tsp coriander seed
– 1 tsp cumin
– Melinjo Crackers
– Carrot and cucumber pickles  (1 carrot & 1 cucumber, cut dice, mix with 2 tbs sugar, 1/2 tbs salt and 2 tbs vinegar, let it for about 1 hr or more) .
– Fried shallot
– Warm rice
– Sambal
–  Tomato slices
– Spring Onion, thinly slices
– Celery leaves, thinly slices
  1. Boil meat, tribe and lung until tender. Let it cool. Cut dice shape.
  2. Preheat oil in a pan. Stir fry grounded ingredients, bay leaves, nutmeg powder and cinnamon stick. Set aside.
  3. Boil water, add meat, tribe, lung and all the ingredients. Cook for about 30 minutes until the meat absorb the ingredients.
  4. Add milk and coconut water. Let it boiled.
  5. Add salt, pepper and sugar.
  6. Ready to serve.
How to serve : Put the soto in a bowl, add fresh tomato, spring onion, celery leaves, fried shallot and pickles(*optional). Eat with warm rice would be nicer.  You can skipped some of additional ingredients and it;s still delicious.

Hi all, this time we go to Nothern part of Indonesia. We’re going to Sumatera Island, Medan exactly. Medan is the capital of the North Sumatra province in Indonesia. Located on the northern coast, Medan is the fourth largest city in Indonesia behind Jakarta, Surabaya, and Bandung; and the largest Indonesian city outside Java. The city was known as Deli when it was developed by Dutch tobacco commerce after the establishment of the Deli Company. There are lots of beautiful foods from Medan. You should try Soto Medan, Lontong Medan, Sayur Ubi Tumbuk (Mashed Cassava leaves in coconut milk) and Mie Gomak. Medan also popular with it’s fruits. There are so many beautiful tropical fruits especially durian. If you go to Medan don’t forget to buy Bolu Gulung Meranti (Cheese Roll Cake) and Pancake Durian. This time i try to make the popular Soto Medan. Alright, let’s rolllll…….





  • 400 gram chicken
  • 2 lemongrass
  • 5 kaffir lime leaves
  • 3 bay leaves
  • 2 cm galangal
  • 11/2 tsp salt
  • 1 tbs sugar
  • 500 ml coconut milk
  • 1.000 ml water
  • 2 tbs oil


Grounded ingredients:

  • 2 cloves shallot
  • 5 cloves garlic
  • 1 tsp coriander seed
  • 1/2 tsp cumin
  • 1/2 tsp white pepper
  • 1 cm ginger
  • 1 tsp turmeric powder



  • 6 boiled eggs
  • 3 tomatoes
  • 2 tbs celery
  • 1 Lime
  • Potato cakes
  • 3 tbs fried shallots



Preheat oil in a pan. Stir fry grounded ingredients, bay leaves, galangal, kaffir lime leaves and lemongrass. Add chicken and cook until it change colour.

Add water and cook until chicken tender. Take the chicken and set aside.

Continue cooking, add salt, sugar and coconut milk. Let it boiled.

Fried chicken for about 5-10 minutes, let it cool then shred it.

How to serve : Put shredded chicken in a bowl, then pour the soup. Put fried shallots and celery on the top. Eat with warm rice, potato cake and boiled egg. You can add sambal too if you like it spicy.




Soto Paru (Beef Lung in Coconut Milk)



Soto Paru / Beef Lung in Coconut Milk


  • 300 gr paru, diced
  • 2 lemongrass
  • 1 spring onion
  • 250ml coconut milk
  • 1.000 ml beef stock
  • 3 lime kaffir leaves
  • 2 bay leaves
  • 3 slices galangal
  • 3 tbs sugar
  • 1½ tbs salt


Grounded Ingredients :

  • 1/2 red onion
  • 5 cloves garlic
  • 1 tsp pepper
  • 1 cm ginger




  1. Cook beef lung in a high pressure cooker until tender.
  2. Stir fry grounded ingredient, kaffir lime leaves, bay leaves, lemongrass, and galangal.
  3. Add beef stock and beef lung. Cook for about 15 minutes or until boiled.
  4. Add coconut milk and let it boiled.
  5. Add salt and sugar to taste.
  6. Add spring onion and ready to serve.


Soto Betawi (Jakarta)

– 1 tomato, dice
– 1 spring onion
– 1 celery
– 2 tbs canola oil
Grounded ingredients:
– 1 shallot
– 5 cloves garlic
– 3 candlenuts
– 1 tsp pepper
– 3 kaffir lime leaves
– 2 lemongrass
– 1 cinnamon
– 2 cardamom
– 1 star annised
– 1 tbs salt
– 1 1/2 tbs sugar
– 1 tsp chicken powder
– Crackers
– Carrot and cucumber pickles  (1 carrot & 1 cucumber, cut dice, mix with 2 tbs sugar, 1/2 tbs salt and 2 tbs vinegar in warm water, let it for about 1 hr or more) .

Preheat oil in a pan. Stir fry grounded ingredients, kaffir lime leaves and lemongrass. Set aside.
Boil beef lung in 2 lt. water until tender. Let it cool and then cut dice.
Boil 1 lt. water, then add beef lung, stir fry ingredients, star anise, cardamom, cinnamon, sugar and salt. Cook for about 30 minutes.
Add fresh milk and chicken powder. Let it boil.
Ready to serve.

Soto Ayam

Hmmm……this food are my fav. With rice or no rice…taste like heaven for me…lol……It made from chicken. There are lots of soto ayam varian in indonesia. Different regions have their own variation of it, for instance:

  • Soto Ambengan, originated from Ambengan, Surabaya (West Java). Soto Ambengan is famous for its delicious koya topping.
  • Soto Banjar originated from Banjarmasin (South Kalimantan), recipe here
  • Soto Kudus, from Kudus (West Java)
  • Soto Medan, from Medan (North Sumatera)

and many more.


Ingredients :

  • half chicken
  • 100 g rice vermicelli, soak in hot water until tender, let it drain, set aside.
  • 100 g bean sprout
  • 100 g cabbage, shredded
  • 1000 ml water
  • 3 cm galangal
  • 2 bay leaves
  • 1 lemongrass, take only white part
  • 3 kaffir lime leaves
  • salt, sugar and pepper to taste


  • 1 lime
  • fried shallot
  • celery
  • 2 tbs canola oil
  • 2 boiled egg

Grounded ingredients :

  • 1 shallot
  • 4 cloves garlic
  • 1 tsp ginger powder
  • 1 tsp turmeric powder
  • 5 candlenuts

Methods :

  1. Boiled chicken with galangal, bay leaves and lemongrass until chicken tender. Set aside. Shredded the chicken.
  2. Heat oil in a pan. Stir fry grounded ingredients until the fragrant come out. Put into chicken stock. Let it boil.
  3. Reduce the heat. Add salt, sugar and pepper. Let it boiled again.
  4. How to serve: Put rice vermicelli, bean sprout, cabbage, boiled egg and shredded chicken in a bowl. Pour hot chicken stock into the bowl. Spread fried shallot and celery on the top and add lime juice. If you like it spicy, you can add sambal/hot chilli.
  5. You also could eat it with warm rice.

Soto Banjar

Soto Banjar is one of legendary food from Banjarmasin – South Kalimantan. It’s so tasty and really nice to have at the winter time. But in Banjarmasin, you could easily find it in hawker market everyday. Also, it’s one of my childhood memory when my family was living there for years.



  • 3 L water
  • 1 kg chicken
  • 1 tsp ginger powder
  • 1 tbs salt
  • 3 cardamom
  • 1 cinnamon
  • 6 cloves
  • 1 tsp nutmeg powder
  • 1 tsp pepper

Grounded ingredients:

  • 1 shallot
  • 5 cloves garlic


  • Rice Cube
  • 100 g rice vermicelli
  • 6 potato cakes
  • 4 boiled eggs


  • 1 green onion
  • 1 tbs celery
  • 1 tbs fried shallot
  • lime juice
  • sweet soy sauce
  • soy sauce
  • sambal


  1. Boil chicken with salt, bay leaves and ginger until tender. Let it cool. Shredded the chicken. Set aside.
  2. Take the chicken stock and put all the ingredients. Let it boil. And continued cook for about 15 minutes.
  3. Arrange rice cube, rice vermicelli , potato cakes and egg in a bowl.  Pour the hot soup. Add the garnish as you like.
  4. Ready to eat.

Soto Sulung



  • 300 gram beef
  • 300 gram beef lung
  • 1500 ml water

Grounded ingredients:

  • 8 cloves shallot
  • 4 cloves garlic
  • 2 tsp turmeric powder
  • 5 candlenuts
  • 1 tsp pepper
  • 1 tbs salt


  • 4 kaffir lime leaves
  • 2 lemongrass
  • 3 cm ginger
  • 1 tsp sugar


  • 3 hard boiling egg
  • 1 green onion, thinly slices
  • 2 celery, thinly slices
  • 3 tbs fried shallot
  • 2 lime


  1. Boil water in a pan. Cook beef meat until tender. Set aside, let it cool and cut diced. Keep the beef stock. While you can boil beef lung in separate pan. Cook until it tender. Set aside, let it cool and cut diced.
  2. Add lime leaves, lemon grass and ginger into beef stock. Stir fry grounded ingredients until fragrant come out. Pour it into beef stock.
  3. Add beef meat and beef lung diced into beef stock.
  4. Cook for about 20 minutes.
  5. Add salt, pepper and sugar to taste.
  6. Serve soto with boiled egg. (you can add lime juice, sweet soy sauce and chilli if you like)
  7. Ready to serve with hot steam rice.
